The Fiesta Mk 7 Engine Coolant Gauge

I have a 16 plate Fiesta 1.25. Frequently, on first start up after an overnight stand, the Engine Coolant Temperature Gauge does not register any heat information, even after driving time when the engine is clearly very warm. If the engine is turned off and restarted immediately, four green bars quickly appear on the gauge, proving the engine was warm. This does not happen if the car is restarted within, say, a three hour stand. Can anyone suggest what the problem might be, please?
